Flying Vada Pav and Other Street Food with a Twist

Recently a video of the flying vada pav from Raghu Dosa wala went viral on YouTube. This recalls to mind the kind of ingenuity Indian street food vendors develop to stand out in a crowd; to create a dedicated clientele for themselves. People of all classes and income brackets will profess their devotion to these innovative, ‘hat ke’ street food vendors. The flying vada pav of Raghu Dosa is just one:

This viral video

In Mumbai’s Bohra Bazaar Raghu Dosa Wala has been dishing up street food for a long time. This is the second generation in the business. The video of this flying vada pav and a rather insane looking cheesy variation has been widely viewed.

Vada Pav Fondue

Cheese lovers of the world unite at this place in Mumbai's Oshiwara area. There are mini pavs stuffed with the potato filling. But the twist is that these are then dipped in molten cheese! Too much? I don’t know. I have it on good authority that there’s no such thing as too much cheese.

Rajinikanth dosa

This guy has been serving dosa for 30 years; a Rajini fan apparently. His speed and generosity with butter are quite amazing --- cheese figures here as well! Check out Muthu Dosa Corner which is to be found at Hind Mata at Dadar Mumbai.

Fire Pani Puri

Move over vodka shots pani puri; that’s old hat. Now there is fire pani puri. The guy actually sets each pani puri alight and then feeds you too! Just in case one is too chicken to actually eat fire. This is an innovative pani puri stall in Nagpur.

India’s biggest sandwich

Tandoori paneer cheese, corn and cheese, these are just some of the sandwich varieties that we hear about in the video. They start with some giant bread slices and add numerous sauces and veggies, corn, fried savories and of course cheese! This one is to be found in Indore

Egg Mughlai

When Gujjus feel bold, they head out for an Amlet (omelet to the untutored), which is why the omelet stalls are so ubiquitous and operate till so late in Gujarat’s cities. This is something I've never come across however: a complicated egg dish that involves a lot of spices and a lot of butter. This is an egg roll with a difference.
